If you have food intolerances it can be tricky eating out or thinking of new and interesting meal ideas. As an intolerance sufferer myself, I tend not to focus on what I can’t eat, but on all the lovely things I can eat. These Vietnamese style spring rolls are one of those things. They’re really not very difficult to make at all and as well as being rather deliciously moreish, they’re also vegan and gluten free.

I used to be partial to the odd KFC but since being diagnosed with a gluten intolerance, eating it makes me feel pretty shitty…so we tend to make this recipe when we want a deep fried meaty treat. Plus home made stuff, in my opinion always tastes better than the takeaway version and besides, it’s much more satisfying to make yourself.
We wanted a kebab on Friday night, so we made one – a deliciously mouth-wateringly good one. Plus, it was much healthier than the usual greasy kebab van offering and it’s pretty quick and easy. You could even prep the meat the night before then all you need to do is cook it and assemble in your pita!
